Polly’s Pies Start Three-Day Baking Marathon Thanksgiving Week

For 72 non-stop hours, beginning Monday, November 21 through Wednesday, November 24, the ovens at Polly’s Pies will be going non-stop with bakers working round-the-clock to fulfill more than 53,000 pie orders just in time for Thanksgiving.
In addition, the culinary team will also be fulfilling some 20,000 take-home orders.
“Thanksgiving is our Super Bowl on steroids,” said James Kaa, president, and CEO of the 53-year-old restaurant brand that opened its first location in Fullerton, California. “During Thanksgiving week, we have three baking teams that do nothing but make and bake pies for the 72 consecutive hours with morning, mid-day, and overnight shifts. We also have team members working alongside the bakers who specifically box and label the pies. It’s something we prepare for all year.”
Kaa went on to say that the Polly’s team must adhere to a strict timeline with a new batch of pies going in the oven every 75 minutes in order to meet its demand. Coinciding with all the pie production, another team is preparing complete Thanksgiving dinners for guests to enjoy at home. This includes making more than 600 dozen dinner rolls at each of its 14 Southern California locations plus all the fixings that go along with the holiday feast.
“As much work as it is, the Thanksgiving frenzy we experience really puts you in the holiday mood,” said Jacklyn Mitosinka, director of brand for Polly’s Pies. “Without a doubt pumpkin is one of our top-selling pies during this time of year followed by apple and our own signature Banberry. We also make gallons and gallons of fresh whipped cream, as well as cinnamon, whipped cream to accompany our pie orders.”
Polly’s Pies is now accepting holiday pie orders as well as complete Thanksgiving dinners to enjoy at home. The restaurant will be open for pre-order pick up only on Thanksgiving day with a limited supply of pies for walk-in purchases. Doors will close promptly at 1 p.m. so team members can enjoy Thanksgiving with their families.
